Sunny days are calling for evenings in the garden with great friends, family and vegan food!
My kitchen was a mess for a while, but it couldn’t stop me from my plan. Have you ever opened the mixer too soon? Then you know what I’m talking about. The guacamole was everywhere.
Luckily, I prepared also my favourite bean salad so everyone was feeded.
This savoury salad is one of my favourites. I’m sure you will fall in love too.
Basic is red beans and canned corn. Some greens, rocket, tomatoes, sun-dried tomatoes, green peppers, radish, olive oil, lemon juice, salt, black pepper, dried oregano and marjoram. Let it sit for a while and enjoy healthy quick supertasty salad!
ON THE CEILING GUACAMOLE
Ripe avocado blended with onion, tomatoes, olive oil, lemon juice, salt and pepper. Easy (when you don’t count the kitchen cleaning) and everyone loves it!
The most important I have to mention is my little helper that always makes the hard work, which is making me smile and cleaning the plates, when I don’t look!
