Tempeh with Lentils

These days we need a lot of good energy.

Lentils are rich in iron, which transports oxygen throughout our body and is important for energy production. They also contain high level of protein and stabilize the blood sugar level. Truly a miracle legume.

Tempeh, another good source of protein, fiber and antioxidants. Tempeh reduces cholesterol and menopausal symptoms. Tempeh is a fermented food and as such it leads to a stronger immune system.

 

we will need:

100g french green lentils

tempeh

onion

1 tablespoon olive oil

1 tablespoon mustard

1 tablespoon apple cider vinegar

salt, chilli, curry, turmeric

 

Put lentils in 3 times more water, add salt, bring to a boil, reduce heat, cover and cook for 25 minutes. Remove from heat and let sit for 10 minutes.

In a pan heat olive oil, add diced onion, chilli, curry powder, turmeric, pinch of salt, 1 tablespoon mustard and 1 tablespoon cider vinegar. Stir well. Add diced tempeh and lentils. Stir until well combined and remove from heat. Ideally served with millet or rice.
