Sweet potatoes are one of the best sources of vitamin A which has an important role in anti-aging, disease prevention and maintenance of a good eyesight.
Sweet potatoes have a low glycemic index which means they provide us with a steady amount of energy. They are rich in magnesium, an anti stress mineral which helps us to calm and distress.
- 2 sweet potatoes
- 1 small zucchini
- 1 small aubergine
- ½ can chickpeas
- 2 garlic cloves
- olive oil
- salt and pepper
- fresh parsley
- Preheat oven to 200°C. Wash sweet potatoes and cut in quarters. Place the potatoes on roasting pan and toss with olive oil. Season with salt and put to oven. Bake for 15 minutes.
- In meantime cut aubergine into rounds and sprinkle with salt. After a while remove the water from the top with a paper towel. This will prevent the aubergine to be bitter.
- Cut the aubergine and zucchini into slices and place on potatoes. Add sliced garlic cloves, ½ can chickpeas and sprinkle with pepper and thyme.
- Bake together for another 45 minutes until golden. Remove from oven and toss with soy creme and fresh parsley.
