Sweet Potatoes with Aubergine

Sweet potatoes are one of the best sources of vitamin A which has an important role in anti-aging, disease prevention and maintenance of a good eyesight.

Sweet potatoes have a low glycemic index which means they provide us with a steady amount of energy. They are rich in magnesium, an anti stress mineral which helps us to calm and distress.

Ingredients
  1. 2 sweet potatoes
  2. 1 small zucchini
  3. 1 small aubergine
  4. ½ can chickpeas
  5. 2 garlic cloves
  6. olive oil
  7. thyme
  8. salt and pepper
  9. fresh parsley
Instructions
  1. Preheat oven to 200°C. Wash sweet potatoes and cut in quarters. Place the potatoes on roasting pan and toss with olive oil. Season with salt and put to oven. Bake for 15 minutes.
  2. In meantime cut aubergine into rounds and sprinkle with salt. After a while remove the water from the top with a paper towel. This will prevent the aubergine to be bitter.
  3. Cut the aubergine and zucchini into slices and place on potatoes. Add sliced garlic cloves, ½ can chickpeas and sprinkle with pepper and thyme.
  4. Bake together for another 45 minutes until golden. Remove from oven and toss with soy creme and fresh parsley.
