I love lentil soup. Creamy lentil soups are the best. I tried to make it little bit different this time and combine it with sweet potato and carrot. It is very easy to make and full of good plantbased protein and energy. Perfect for light summer dinners.
we will need:
1 big sweet potato
100g red lentils
1 tablespoon olive oil
3 garlic cloves
Heat the olive oil and add diced peeled sweet potato and carrot. Stir for a little while, add red lentils and 1L boiling water. Add crushed garlic cloves, 1 teaspoon salt, ground chilli and reduce the heat. Cook under cover for 30 minutes until the vegetables get tender. Mix with hand mixer until smooth.
Serve in bowls topped with a soy cream and in my case I used also baked fennel and black sesame seeds for decoration.
