Rice noodles are a good alternative for wheat noodles. They are gluten free and easy to digest. Filling and tasty! This recipe is perfect because it is quick, light, healthy and full of delicious veggies.

Ingredients
  1. 100g rice noodles
  2. 1 carrot
  3. ½ zucchini
  4. 1 spring onion
  5. green part of leek
  6. snow peas
  7. 1 tablespoon sesame oil
  8. 1 tablespoon soy sauce
  9. 1 tablespoon lemon juice
  10. 1 garlic clove
  11. 1cm piece ginger
  12. 1 teaspoon turmeric
  13. peanuts
  14. salt
  15. dill
Instructions
  1. Cook rice noodles over a medium heat for 5 minutes. Remove from heat, drain the noodles and put them aside.
  2. Julienne the vegetables. Heat the sesame oil in a wok, add the veggies, chopped peanuts and stir for 5 minutes until tender.
  3. Sprinkle with salt and turmeric. Add sliced garlic and ginger, soy sauce, lemon juice and cook for another 4 minutes.
  4. Add cooked rice noodles and stir for 1 minute until combined and sprinkle with dill.
