Colourful Quinoa Aubergine

I had some quinoa left in the fridge and an aubergine that was waiting to be eaten. A perfect start to bake colourful vegan lunch.

 

we will need:

aubergine

1 cup cooked quinoa

1 small tomato

red and green pepper

onion and garlic

1 tablespoon lime juice

1 tablespoon olive oil

turmeric…for the nice colour

salt, chilli, thyme and marjoram to taste

Cut the aubergine in half, cut out the inside and salt it. In meantime mix quinoa with diced vegetables, pressed garlic and all other ingredients. Don’t forget the aubergine inside! Fill the aubergine and bake in preheated oven to 200 °C for about 30 minutes. For decoration I used black sesame seeds, garden cress sprouts and soy cream.
