Quinoa with “Peace”

Green peas are great source of vitamin K which is good for our brain, vitamin A which is good for our skin and eye-sight. Fiber helps to improve our metabolism by improving digestion. Peas are rich in minerals such as iron, calcium , zinc or copper that help to build our immunity.

And these are only a few of amazing peas benefits.

And for now is the season of peas, let’s involve them more in our kitchen.

  1. 100g quinoa
  2. green peas
  3. 50g tempeh
  4. 1 small onion
  5. 1 tablespoon olive oil
  6. 1 tablespoon lemon juice
  7. salt and pepper
  8. fresh parsley
  1. Bring 200 ml water to a boil, add quinoa, 1/2 tablespoon of salt and green peas. Reduce the heat and cook covered for 15 minutes.
  2. Place the quinoa in a bowl and add diced tempeh, onion, chopped parsley, olive oil, lemon juice and pepper. Toss well.
  1. Serve with cucumber salad with sour cream.
  2. Serves 1 as main dish or 2 as side dish.
