- 100g quinoa
- green peas
- 50g tempeh
- 1 small onion
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- salt and pepper
- fresh parsley
- Bring 200 ml water to a boil, add quinoa, 1/2 tablespoon of salt and green peas. Reduce the heat and cook covered for 15 minutes.
- Place the quinoa in a bowl and add diced tempeh, onion, chopped parsley, olive oil, lemon juice and pepper. Toss well.
- Serve with cucumber salad with sour cream.
- Serves 1 as main dish or 2 as side dish.
